Scratch cooking, local foods boost school lunch menu

OCONTO FALLS - Recent debates over the place of potatoes, ketchup or chicken nuggets in a school lunch menu don't get much attention from students and staff of the Oconto Falls school district where menu items include chicken vegetable stir fry, pasta primavera, wheatberry salad, whipped acorn squash, star fruit and pumpkin muffins.

"We do a lot of stuff from scratch," said Chef Josh Good, who prepares recipes for Oconto Falls and 10 other Wisconsin school districts for food-service provider Taher Inc. of Minnetonka, Minn. "It's not the old school where it comes out of a box preprocessed."
